Tofu Poke

Tofu Poke is perfect for those in your family who don’t or won’t eat raw fish. It is also a great way to make bland tofu interesting to eat. We also like this recipe because it is way cheaper than having to buy fresh ahi or aku. Make sure to use firm tofu for this recipe. Yakidofu or Japanese grilled tofu can also be substituted for firm tofu.

Fuj’s Cake

Here is an awesome recipe for a very unreal looking and tasting chocolate cake. The family who gave us this recipe hails from Kapahulu where they take pride in their baked goods. Chicken Italiano (Hawaii Style)

For you Italian cooks out there don’t get all bent out of shape because we use Italian spaghetti sauce mix and Korean hot sauce in out Chicken Italiano. You guys gotta remember that Hawaii is a rock in the middle of the Pacific. The majority of anything fresh in Hawaii must be flown in and that makes things very expensive. It is not surprising that Hawaii people have become very creative in cooking with non-perishable items.

Mushrooms and Chicken

If you want to do a baked chicken dish where your chicken ends up being juicy and tender, you got to give this one a try. Anytime you add mushrooms, bread crumbs, and butter to chicken you know it is going to be good. This recipe is perfect for the big bags of chicken breast that you get from Costco or Sams. Also be sure to use Japanese Panko Bread crumbs.

Mushroom Chicken (Japanese Style)

When people in Hawaii think of Mushroom Chicken, they automatically think of chicken in Campbell’s Cream of Mushroom Soup. Well this Mushroom Chicken recipe is the Japanese version and also very good in its own way. Besides we all know that anything with shiitake mushrooms and shiitake musrhroom water has got to taste good.

Ono Chicken Wings

This is a very great tasting and can’t miss pupu dish. Just remember you are going to need about 1 hour 45 minutes from start to finish so plan ahead. This recipe also works good with chicken drummettes.

Ono Chicken Wings

4 lbs. chicken wings
¾ c. shoyu
¾ c. sugar
¾ c. water
3 Tbsp. mirin
4” piece of ginger, crushed
4 cloves garlic crushed

Combine all ingredients in a large pot, and cook on high until mixture come to a boil. Then lower temperature to medium and simmer for 1-1 ½ hours until chicken is tender.

Barbecued Chicken Thighs

We agree it is probably easier to just buy a huge bottle of barbecue sauce from Sam’s or Costco, pour it all over your chicken, then cook it up. However by doing the recipe you will have the satisfaction of knowing that you can actually cook something and are not some cooking baby always reliant on the bottle (of barbecue sauce). This recipe is dedicated to those that refuse to use barbecue sauce out of a bottle or plastic jug. For those of you too busy to care stick to the store bought stuff.
