For you Italian cooks out there don’t get all bent out of shape because we use Italian spaghetti sauce mix and Korean hot sauce in out Chicken Italiano. You guys gotta remember that Hawaii is a rock in the middle of the Pacific. The majority of anything fresh in Hawaii must be flown in and that makes things very expensive. This is a very great tasting and can’t miss pupu dish. Just remember you are going to need about 1 hour 45 minutes from start to finish so plan ahead. This recipe also works good with chicken drummettes.
Ono Chicken Wings
4 lbs. chicken wings
¾ c. shoyu
¾ c. sugar
¾ c. water
3 Tbsp. mirin
4” piece of ginger, crushed
4 cloves garlic crushed
Combine all ingredients in a large pot, and cook on high until mixture come to a boil. Then lower temperature to medium and simmer for 1-1 ½ hours until chicken is tender.

We agree it is probably easier to just buy a huge bottle of barbecue sauce from Sam’s or Costco, pour it all over your chicken, then cook it up. However by doing the recipe you will have the satisfaction of knowing that you can actually cook something and are not some cooking baby always reliant on the bottle (of barbecue sauce). This recipe is dedicated to those that refuse to use barbecue sauce out of a bottle or plastic jug. For those of you too busy to care stick to the store bought stuff.
