Method
- Start with fresh, vibrant mint leaves that smell bright and alive. Avoid mint that's brown or wilted.
- Fill your tall glass with crushed or cubed ice, making sure it's truly full and packed down slightly.
- Place 8 to 12 mint leaves directly into your ice-filled glass.
- Pour half an ounce (about one tablespoon) of simple syrup over the mint.
- Using a muddler or the back of a wooden spoon, gently press the mint leaves into the ice and syrup with about three to four light presses. Use a light touch to avoid releasing bitter compounds.
- Cut your lime into wedges and squeeze two to three wedges directly into the glass, letting the juice fall over the mint and ice. You want about 0.75 ounce of fresh lime juice.
- Pour four ounces of cold club soda into the glass, filling it nearly to the top.
- Gently stir the drink with a bar spoon for about ten seconds to combine everything evenly. Take a quick taste and adjust by adding more lime juice if it needs tartness or a splash more syrup if it's too sharp.
- Serve immediately with a sprig of fresh mint as garnish.
Notes
The secret to a perfect virgin mojito is using truly fresh mint and never over-muddling it. Make your own simple syrup by heating equal parts sugar and water until dissolved, then cool completely. Use the coldest water and ice possible. Add a tiny pinch of sea salt before serving to amplify flavors. Serve immediately after assembly for best results.
