Ingredients

Main
  • 2 cups granulated sugar
  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups mini marshmallows
  • 2 cups white chocolate chips

Equipment

  • Heavy-bottomed saucepan
  • Wooden spoon or spatula
  • 9x9-inch square baking pan
  • Parchment paper
  • Candy thermometer (optional)

Method

  1. Line your baking pan with parchment paper, leaving overhang.
  2. In a heavy-bottomed saucepan, combine granulated sugar, butter, and heavy cream.
  3. Stir over medium heat until the butter has melted and the mixture is smooth.
  4. Increase heat to medium-high and bring the mixture to a rolling boil.
  5. Boil for about 5 minutes, or until the mixture reaches the soft ball stage (234°F to 240°F).
  6. Remove from heat immediately once the desired temperature is reached.
  7. Stir in the vanilla extract, salt, mini marshmallows, and white chocolate chips until melted and well combined.
  8. Pour the fudge mixture into the prepared pan and spread it evenly.
  9. Allow the fudge to cool at room temperature for about 2 hours until set.

Notes

For a silky smooth texture, avoid stirring the mixture too much after it begins to boil.
