- Rinse the turkey necks under cold water to remove any residue.
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the chopped onion and minced garlic and sauté until the onion is translucent and fragrant, about 3 to 5 minutes.
- Add the turkey necks and brown on all sides, about 4 to 5 minutes.
- Pour the chicken broth over the turkey necks and bring to a simmer.
- Season with paprika, thyme, salt, and pepper to taste.
- Add the mixed vegetables and stir gently to combine.
- Cover the pot and reduce heat to low. Simmer for 2 hours, until the meat is tender and the broth is flavorful.
