  • 2 pounds turkey necks
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 cups mixed vegetables like carrots and celery

Method
 

  1. Rinse the turkey necks under cold water to remove any residue.
  2. Heat the olive oil in a large pot or Dutch oven over medium heat.
  3. Add the chopped onion and minced garlic and sauté until the onion is translucent and fragrant, about 3 to 5 minutes.
  4. Add the turkey necks and brown on all sides, about 4 to 5 minutes.
  5. Pour the chicken broth over the turkey necks and bring to a simmer.
  6. Season with paprika, thyme, salt, and pepper to taste.
  7. Add the mixed vegetables and stir gently to combine.
  8. Cover the pot and reduce heat to low. Simmer for 2 hours, until the meat is tender and the broth is flavorful.

Notes

For even more flavor, let the turkey necks rest in the broth overnight before reheating.
