  • 4 large Vidalia onions or other sweet onions, cut into 1/2-inch thick slices
  • 4 tablespoons unsalted butter melted
  • 1 and 1/2 cups sharp cheddar cheese shredded
  • 1/2 cup Parmesan cheese grated
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika optional, for color

Method
 

  1. Preheat your oven to 350°F and lightly grease a 9x13 inch baking dish with butter or cooking spray.
  2. Peel the onions and cut them into 1/2-inch thick rounds, keeping the rings intact as much as possible.
  3. Layer the onion slices in the prepared baking dish, overlapping them slightly if needed to fit them all in. Separate some of the rings to create more surface area.
  4. Drizzle the melted butter evenly over all the onions, then sprinkle with salt, pepper, garlic powder, and paprika if using.
  5. In a bowl, combine the shredded cheddar and grated Parmesan, then spread this mixture evenly over the seasoned onions, covering them completely.
  6. Cover the baking dish tightly with aluminum foil and place it in the preheated oven for 30 minutes.
  7. Remove the foil and return the dish to the oven for an additional 15 minutes, or until the cheese is golden brown and bubbly.
  8. Let the Tennessee Onions rest for 5 minutes after removing from the oven before serving.

Notes

Use freshly shredded cheese rather than pre-shredded varieties for the best melting and browning. Choose onions that are similar in size so the slices cook evenly. For extra depth, add a splash of Worcestershire sauce or a pinch of cayenne pepper to the butter before drizzling. Watch the cheese closely during the final uncovered baking to prevent burning. Store leftovers in an airtight container in the refrigerator for up to 4 days.
