Method
- Preheat the oven to 350°F (175°C).
- Grease a 9x5-inch loaf pan with butter or cooking spray.
- In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, cream the softened butter and sugar until light and fluffy, about 3–4 minutes.
- Add the eggs one at a time and the vanilla extract to the butter mixture, mixing until combined.
- Gradually add the dry ingredients to the wet mixture, alternating with the sour cream, mixing until just combined.
- Fold in the chopped pecans gently with a spatula.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For an extra touch, sprinkle chopped pecans on top of the batter before baking. Use room temperature ingredients and avoid overmixing to keep the bread tender.
