  • 1 pre-baked 9-inch pie crust
  • 4 cups fresh strawberries hulled and halved
  • 1 cup water
  • 1 cup granulated sugar
  • 2 cups strawberry Jello
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • Whipped cream for topping optional

Method
 

  1. Prepare the pie crust according to package instructions or bake a homemade crust until golden, then let it cool completely.
  2. Wash and hull 4 cups fresh strawberries, then slice each berry in half.
  3. In a saucepan over medium heat, bring 1 cup water to a boil.
  4. Stir in 1 cup granulated sugar and 2 cups strawberry Jello powder until fully dissolved, about 2 minutes.
  5. Mix 2 tablespoons cornstarch with 1 tablespoon cold water in a small bowl, then add to the boiling mixture, stirring constantly until thickened, about 1 minute.
  6. Remove the saucepan from heat and stir in 1 tablespoon lemon juice.
  7. Place the sliced strawberries in a mixing bowl and pour the warm Jello mixture over them, gently tossing to coat.
  8. Pour the strawberry and Jello mixture into the prepared pie crust, spreading evenly, then refrigerate for at least 2 hours to set.

Notes

For an extra touch, add a dollop of whipped cream on top before serving.
