- Prepare the pie crust according to package instructions or bake a homemade crust until golden, then let it cool completely.
- Wash and hull 4 cups fresh strawberries, then slice each berry in half.
- In a saucepan over medium heat, bring 1 cup water to a boil.
- Stir in 1 cup granulated sugar and 2 cups strawberry Jello powder until fully dissolved, about 2 minutes.
- Mix 2 tablespoons cornstarch with 1 tablespoon cold water in a small bowl, then add to the boiling mixture, stirring constantly until thickened, about 1 minute.
- Remove the saucepan from heat and stir in 1 tablespoon lemon juice.
- Place the sliced strawberries in a mixing bowl and pour the warm Jello mixture over them, gently tossing to coat.
- Pour the strawberry and Jello mixture into the prepared pie crust, spreading evenly, then refrigerate for at least 2 hours to set.
Notes
For an extra touch, add a dollop of whipped cream on top before serving.
