  • 1 cup green beans trimmed and chopped
  • 1 cup corn fresh or frozen
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Method
 

  1. Step 1: Heat 1 tablespoon olive oil in a large pot over medium heat.
  2. Step 2: Add 1 chopped onion, 2 diced carrots, and 2 diced celery stalks; sauté for about 5 minutes until vegetables soften and onion is translucent.
  3. Step 3: Pour in 4 cups vegetable or chicken broth and bring to a gentle boil.
  4. Step 4: Add 2 cups diced potatoes and stir to combine.
  5. Step 5: Stir in 1 cup chopped green beans and 1 cup corn.
  6. Step 6: Season with 1 teaspoon dried thyme, salt, and pepper to taste.
  7. Step 7: Reduce heat to low and simmer for 30 minutes, allowing flavors to meld.
