Ingredients
  

Main
  • 4 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheese cheddar, mozzarella, or your favorite
  • 1/4 cup cooked bacon or sausage optional
  • 1/4 cup chopped vegetables spinach, bell peppers, or mushrooms
  • Salt and pepper to taste

Equipment

  • Sous vide immersion circulator
  • Blender or food processor
  • Small mason jars or silicone molds
  • Large pot for water bath
  • Whisk

Method
 

  1. Step 1: Fill a large pot with water, attach the sous vide immersion circulator, and set it to 172°F (78°C).
  2. Step 2: In a blender, combine the eggs, cottage cheese, shredded cheese, salt, and pepper. Blend until smooth and creamy.
  3. Step 3: Stir in the cooked bacon or sausage and chopped vegetables until evenly distributed.
  4. Step 4: Lightly grease small mason jars or silicone molds with oil or cooking spray to prevent sticking.
  5. Step 5: Pour the egg mixture into the prepared jars, filling each about 3/4 full to allow room for expansion.
  6. Step 6: Screw on the jar lids until fingertip-tight, allowing steam to escape during cooking.
  7. Step 7: Submerge the jars in the preheated water bath and cook for 1 hour at 172°F (78°C).
  8. Step 8: Carefully remove the jars from the water bath and let them cool slightly before serving or storing.

Notes

Store leftover egg bites in an airtight container in the refrigerator for up to 5 days or freeze for up to 2 months. Reheat in the microwave for 30–60 seconds or in the oven at 350°F (175°C) for 10 minutes.
