  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon smoked paprika
  • 1/4 cup honey
  • 1/4 cup soy sauce

Equipment

  • Smoker or grill with a lid

Method

  1. Rinse the duck under cold water and pat dry with paper towels.
  2. Rub the duck thoroughly with kosher salt, black pepper, garlic powder, onion powder, and smoked paprika.

  5. Add soaked wood chips to the smoker.
  6. Place the duck on the smoker rack, breast side up, and close the lid.
  7. Smoke for about 3 hours, until the internal temperature reaches 165°F (74°C).
  8. Remove the duck from the smoker and let it rest for 15 minutes.
  9. Carve the duck into serving pieces and arrange on a platter.

Notes

Pair your smoked duck with sides that complement its rich flavor, like roasted vegetables or garlic mashed potatoes.
