Ingredients

Main
  • 1 large bologna log about 3-4 pounds
  • 1 tablespoon mustard for binding rub
  • 2 tablespoons brown sugar for sweetness
  • 1 tablespoon paprika for color and flavor
  • 1 teaspoon garlic powder for depth
  • 1 teaspoon black pepper for a bit of kick
  • Wood chips for smoking

Equipment

  • Smoker or grill with a lid
  • Meat thermometer
  • Sharp knife
  • Cutting board
  • Wood chips (hickory or mesquite recommended)

Method

  1. Start by preheating your smoker to 225°F.
  2. Using a sharp knife, make shallow cuts in a diamond pattern across the surface of the bologna.
  3. Spread a thin layer of mustard all over the bologna log.
  4. In a bowl, combine brown sugar, paprika, garlic powder, and black pepper.
  5. Generously coat the bologna with the spice rub.
  6. Soak your wood chips in water for about 30 minutes before using.
  7. Place the bologna in the smoker and add the soaked wood chips.
  8. Close the lid and let it smoke for about 2 hours, or until it reaches an internal temperature of 145°F.
  9. Remove the bologna from the smoker and let it rest for about 15 minutes.

Notes

For an extra touch, brush the bologna with barbecue sauce during the last 30 minutes of smoking!
