- Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper or a silicone mat.
- Scrub the purple sweet potatoes under cold running water to remove any dirt, then pat them completely dry with a clean kitchen towel. Cut them into uniform 1-inch cubes, keeping the pieces similar in size so they cook evenly.
- Place the cubed sweet potatoes in a large mixing bowl and drizzle with the olive oil. Add the salt, black pepper, and garlic powder, then use your hands or a large spoon to toss everything together until each piece is evenly coated.
- Spread the seasoned sweet potato cubes in a single layer on your prepared baking sheet, making sure none of them touch or overlap.
- Place the baking sheet on the middle rack of your preheated oven and roast for 15 minutes without touching them.
- After 15 minutes, use kitchen tongs or a spatula to flip each piece so a new side contacts the hot pan. Return the pan to the oven and roast for another 15 minutes until the potatoes are fork-tender and have crispy, caramelized edges on multiple sides.
- Pierce a few pieces with a fork to ensure they're tender all the way through while the edges look golden and slightly crispy. If they need more time, give them another 5 minutes.
- Remove the baking sheet from the oven and let the sweet potatoes rest for 2 to 3 minutes before transferring to a serving dish. Garnish with fresh herbs if desired and serve immediately while they're still hot.
Notes
For extra crispy sweet potatoes, toss them with a tablespoon of cornstarch or arrowroot powder along with the oil and seasonings. This creates an even crispier coating that stays crunchy longer. Store cooled roasted purple sweet potatoes in an airtight container in the refrigerator for up to 5 days. Reheat in a 400°F oven for 10 to 12 minutes to restore the crispy exterior.
