Method
- Bring a pot of water to a boil over high heat and cook the ramen noodles according to package instructions, about 3–5 minutes.
- Drain the noodles and rinse under cold running water to stop the cooking process and cool the noodles.
- While the noodles cool, chop the vegetables: shred the cabbage and carrots, slice the bell peppers, and chop the green onions.
- In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, honey, and grated ginger until well combined.
- In a large mixing bowl, combine the cooled ramen noodles, shredded cabbage, shredded carrots, sliced bell peppers, chopped green onions, and sliced almonds or sunflower seeds.
- Pour the dressing over the salad and toss gently until all ingredients are evenly coated.
- Season with salt and pepper to taste and toss again.
- Cover and chill the salad in the refrigerator for at least 30 minutes before serving.
Notes
Store the salad in an airtight container in the refrigerator for up to 3 days. Keep the dressing separate if storing leftovers for best texture.
