- Preheat the oven to 375°F (190°C).
- Combine raisins and water in a medium saucepan and bring to a boil, then reduce heat and simmer for 5 minutes to plump the raisins.
- In a mixing bowl, whisk together granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, and salt.
- Remove the saucepan from heat and stir in the sugar mixture and lemon juice into the raisins to create a thick, syrupy filling.
- Roll out the pie crust and fit it into a 9-inch pie pan, trimming any excess dough hanging over the edges.
- Pour the raisin filling into the prepared pie crust, spreading it evenly, and dot the top with small pieces of butter.
- Cover with a top crust or lattice if desired, cutting slits for steam to escape.
- Bake for 45 minutes or until the crust is golden brown and the filling is bubbling.
- Let the pie cool completely before slicing.
