  • 3-4 pounds pork sirloin roast
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons dried rosemary
  • 1 teaspoon dried thyme
  • 1 cup chicken broth

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Pat the pork sirloin roast dry with paper towels to ensure a good sear.
  3. In a small bowl, combine olive oil, minced garlic, salt, pepper, dried rosemary, and dried thyme.
  4. Rub the herb and oil mixture all over the roast, coating it evenly.
  5. Heat a large skillet over medium-high heat and sear the roast on all sides for 3-4 minutes per side until golden brown.
  6. Transfer the seared roast to a roasting pan and pour 1 cup of chicken broth around the meat.
  7. Insert a meat thermometer into the thickest part of the roast and roast in the oven for about 1 hour 30 minutes, or until the internal temperature reaches 145°F (63°C).
  8. Remove the roast from the oven and cover it loosely with aluminum foil. Let it rest for 10-15 minutes to allow juices to redistribute.
  9. Slice the roast against the grain into thick pieces and serve with pan juices.

Notes

Let the roast rest before slicing to keep it juicy. Save pan drippings for gravy.
