Ingredients

Main
  • 1 pound ground pork
  • 1/2 pound diced pork shoulder
  • 1/2 cup chicken broth
  • 1 small onion finely chopped
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter cold and cubed
  • 1 large egg beaten (for egg wash)

Equipment

  • Mixing bowl
  • Rolling pin
  • Pie dish
  • Sharp knife
  • Pastry brush
  • Oven

Method

  1. In a mixing bowl, combine the ground pork, diced pork shoulder, chopped onion, salt, pepper, thyme, and chicken broth.
  2. In another bowl, mix the flour and baking powder. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Add cold water, one tablespoon at a time, until the dough comes together. Be careful not to overwork it.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. On a floured surface, roll out two-thirds of the dough to fit your pie dish.
  6. Place the rolled-out dough in the pie dish and fill it with the meat mixture.
  7. Roll out the remaining dough and place it over the filling, sealing the edges.
  8. Brush the top with the beaten egg and cut a few slits for steam to escape.
  9. Bake in a preheated oven at 375°F for about 1 hour and 30 minutes, until golden brown.
  10. Let the pie cool completely before slicing.

Notes

Serve with pickles or chutney for added flavor.
