Method
 

  1. In a mixing bowl, whisk together olive oil, lime juice, chili powder, cumin, garlic powder, onion powder, salt, and pepper to prepare the marinade.
  2. Add the chicken thighs to the bowl and coat each piece thoroughly with the marinade. Cover and refrigerate for at least 30 minutes, or up to overnight for deeper flavor.
  3. Preheat your grill or grill pan over medium-high heat while the chicken marinates, ensuring it’s hot enough to sear.
  4. Place the marinated chicken thighs on the preheated grill and cook for 6-7 minutes per side, achieving a nice char and ensuring even cooking.
  5. Use a meat thermometer to check that the internal temperature of the chicken reaches 165°F (74°C) for safe consumption.
  6. Remove the chicken from the grill and let it rest on a cutting board for 5 minutes to allow the juices to redistribute.
  7. Slice the rested chicken thighs into strips and arrange them on a serving platter.
  8. Garnish the sliced chicken with fresh cilantro before serving to add color and a burst of freshness.
