- Wash, peel, and chop the peaches.
- In a medium saucepan, combine the chopped peaches, sugar, and water.
- Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugar.
- Reduce heat to low and simmer for 20 minutes until the syrup thickens slightly.
- Stir in the lemon juice during the last few minutes of simmering to brighten the flavor.
- Strain the syrup through a fine mesh strainer or cheesecloth into a clean container to remove solids.
- If using, stir the vanilla extract into the strained syrup.
- Allow the syrup to cool completely before transferring it to jars or bottles for storage.

Store the syrup in sterilized jars in the refrigerator for up to 3-4 weeks or freeze in ice cube trays for longer storage.
