  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh peaches peeled and diced

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9x5-inch loaf pan with oil or cooking spray.

  4. In another bowl, whisk the sugar, vegetable oil, eggs, and vanilla extract until smooth.

  8. Bake for 50 minutes or until a toothpick inserted in the center comes out clean.
