- Preheat the oven to 350°F (175°C).
- Cube the day-old bread into bite-sized pieces.
- In a large skillet, melt the unsalted butter over medium heat.
- Add the diced onion and celery and sauté until soft and fragrant, about 5 minutes.
- Fold in the fresh oysters and sauté until heated through, about 3 to 4 minutes.
- Stir in the chopped parsley and dried thyme until evenly distributed.
- In a mixing bowl, combine the sautéed mixture with the cubed bread and toss gently to coat.
- Slowly pour in the chicken broth, stirring until the bread is moistened but not soggy.
- Season with salt and pepper to taste.
- Transfer the mixture to a greased baking dish and spread evenly.
- Bake in the preheated oven for 30 minutes, until the top is golden and crispy.
- Let the dressing rest for 10 minutes before serving.
