Ingredients

Main
  • 4 cups all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon instant yeast
  • 2 cups warm water
  • 1/4 cup olive oil plus more for drizzling
  • Fresh herbs like rosemary or thyme for topping
  • Coarse sea salt for sprinkling

Equipment

  • Large mixing bowl
  • Wooden spoon or spatula
  • Plastic wrap or kitchen towel
  • Baking sheet or pan
  • Oven
  • Measuring cups and spoons

Method

  1. In a large mixing bowl, combine the flour, salt, and yeast. Stir until well mixed.
  2. Add the warm water and olive oil to the mixture and stir until a shaggy dough forms.
  3. Cover the bowl with plastic wrap or a kitchen towel and allow the dough to rise at room temperature for about 12 hours.
  4. Grease a baking sheet with olive oil.
  5. Turn the dough out onto the prepared baking sheet. Use your fingers to stretch and spread it out to fit the pan.
  6. Drizzle more olive oil over the dough, create dimples in the surface, then sprinkle with fresh herbs and coarse sea salt.
  7. Cover the dough again and let it rise for another 30 minutes.
  8. Preheat your oven to 425°F (220°C).
  9. Bake the focaccia for 20 to 25 minutes, or until golden brown.

Notes

Serve warm with olive oil and balsamic vinegar for dipping, or use as a base for sandwiches.
