  • 4 orange roughy fillets
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • 1 tablespoon lime juice
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Rinse the orange roughy fillets under cold water and pat dry with paper towels.
  2. Season both sides of the fillets with salt, pepper, and paprika.
  3. Heat olive oil in a large skillet over medium heat.
  4. Place the fillets in the skillet and cook for 4 to 5 minutes on each side, until the fish is opaque and flakes easily.
  5. In the last minute of cooking, add the minced garlic to the skillet and cook for 1 minute, stirring the oil.
  6. Remove the fillets from the skillet and set aside on a plate.
  7. Add the lemon juice and lime juice to the same skillet and stir to combine with the oil and garlic.
  8. Return the fillets to the skillet and spoon the citrus sauce over them for 1 minute to absorb the flavors.
  9. Transfer the fillets to a serving platter, drizzle with any remaining sauce, and garnish with chopped fresh parsley.

Serve immediately for the best texture and flavor.
