- Preheat the oven to 375°F (190°C) ensuring it reaches the correct temperature before baking.
- In a mixing bowl, whisk together olive oil, soy sauce, honey, Dijon mustard, minced garlic, black pepper, salt, and smoked paprika to form the marinade.
- Place chicken breasts in a baking dish and pour the marinade over them, making sure each piece is well coated.
- Cover the baking dish with plastic wrap or foil and refrigerate for at least 30 minutes, or up to 24 hours for maximum flavor.
- Remove the chicken from the marinade, discard any excess liquid, and arrange the breasts evenly in the dish.
- Bake in the preheated oven for 25–30 minutes, or until the internal temperature of the chicken reaches 165°F (75°C) when checked with a meat thermometer.
- Once cooked, remove the chicken from the oven and let it rest for 5–10 minutes to allow juices to redistribute.
- Slice the chicken against the grain and serve immediately with your favorite side dishes.
