Ingredients

  • 8 ounces cubed cheese such as feta or mozzarella
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes optional
  • Salt and pepper to taste

Method
 

  1. Gather all ingredients.
  2. Cut cheese into bite-sized cubes.
  3. In a medium mixing bowl, whisk together olive oil, red wine vinegar, minced garlic, dried oregano, dried basil, and red pepper flakes until well blended.
  4. Season the marinade with salt and pepper to taste.
  5. Add cubed cheese to the bowl and stir gently to coat evenly.
  6. Transfer the cheese to a jar or airtight container and refrigerate for at least 1 hour, or overnight for best flavor.
  7. Serve the marinated cheese with crackers, bread, or as part of a charcuterie board.
  8. Store leftovers in the refrigerator in the marinade for up to one week.
