  • 4 boneless skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Place each chicken breast between plastic wrap and pound to 1-inch thickness.
  3. In a bowl, whisk the eggs until smooth.
  4. In a separate bowl, combine breadcrumbs, grated Parmesan cheese, garlic powder, dried Italian herbs, salt, and pepper.
  5. Dip each chicken breast into the whisked eggs, letting excess drip off, then press into the breadcrumb mixture to coat evenly.
  6. Heat 2 tablespoons of olive oil in an oven-safe skillet over medium-high heat.
  7. Sear the coated chicken breasts in the hot skillet for 3 to 4 minutes per side until golden brown.
  8. Transfer the skillet to the preheated oven and bake for 15 to 20 minutes, or until the internal temperature reaches 165°F (75°C).
  9. Remove from oven and let the chicken rest for 5 minutes before slicing and serving.

Notes

Always use freshly grated Parmesan cheese for the best flavor and texture.
