Method
- Preheat the oven to 400°F (200°C).
- Place each chicken breast between plastic wrap and pound to 1-inch thickness.
- In a bowl, whisk the eggs until smooth.
- In a separate bowl, combine breadcrumbs, grated Parmesan cheese, garlic powder, dried Italian herbs, salt, and pepper.
- Dip each chicken breast into the whisked eggs, letting excess drip off, then press into the breadcrumb mixture to coat evenly.
- Heat 2 tablespoons of olive oil in an oven-safe skillet over medium-high heat.
- Sear the coated chicken breasts in the hot skillet for 3 to 4 minutes per side until golden brown.
- Transfer the skillet to the preheated oven and bake for 15 to 20 minutes, or until the internal temperature reaches 165°F (75°C).
- Remove from oven and let the chicken rest for 5 minutes before slicing and serving.
Notes
Always use freshly grated Parmesan cheese for the best flavor and texture.
