Main
  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup cold water
  • 1 tablespoon vinegar

Equipment

  • Whisk
  • Deep fryer or heavy pot
  • Cooking thermometer
  • Slotted spoon
  • Paper towels

Method

  1. In a mixing bowl, combine the flour, cornmeal, baking powder, salt, and black pepper.
  2. Gradually whisk in the cold water and vinegar until smooth.
  3. In your deep fryer or pot, heat oil to 350°F (175°C).
  4. Pat your fish dry with paper towels to prevent moisture from causing the batter to slide off.
  5. Dip each piece of fish into the batter, allowing excess to drip off.
  6. Carefully place battered fish into the hot oil and fry in batches for 4-5 minutes or until golden brown.
  7. Use a slotted spoon to remove the fish and place it on paper towels to drain excess oil.

Notes

Serve with classic coleslaw, hushpuppies, or tartar sauce for dipping.
