- Preheat the oven to 425°F (220°C).
- Cut the russet potatoes into uniform 1/4-inch thick fries.
- Place the cut fries in a large bowl and soak in cold water for at least 30 minutes.
- Drain the potatoes and pat them dry thoroughly with paper towels.
- In the large bowl, toss the dried fries with olive oil, kosher salt, garlic powder, paprika, and black pepper until evenly coated.
- Arrange the seasoned fries in a single layer on a baking sheet lined with parchment paper, ensuring they do not overlap.
- Bake for 20–25 minutes at 425°F (220°C), stirring halfway through, until the fries are golden brown and crispy.
- Remove the fries from the oven and immediately sprinkle the shredded cheddar cheese over the hot fries; let stand for 2 minutes to melt.
- Top the fries with crumbled bacon, sour cream, fresh chives, green onions, and crispy fried onions.
- Serve immediately to maintain crispiness.
