  • 1 cup granulated sugar
  • 2 tablespoons dried culinary lavender buds or 3 tablespoons fresh lavender flowers

Method
 

  1. Measure your ingredients: 1 cup water, 1 cup granulated sugar, 2 tablespoons dried culinary lavender buds.
  2. Combine water and sugar in a medium saucepan over cold water and stir gently.
  3. Heat the mixture over medium heat, stirring occasionally until sugar dissolves, about 2 to 3 minutes.
  4. Bring the syrup to a gentle simmer, with small bubbles forming around the edges, without reaching a rolling boil.
  5. Remove the pan from heat and add the lavender buds, stirring gently to mix.
  6. Let the lavender steep in the hot syrup for 5 to 10 minutes, depending on desired flavor intensity.
  7. Strain the syrup through a fine mesh strainer or cheesecloth into a clean glass jar, pressing the buds gently to extract remaining liquid.
  8. Allow the syrup to cool to room temperature, about 15 to 20 minutes, then seal the jar with a tight-fitting lid.

Notes

Store in a sealed glass jar in the refrigerator for up to three weeks or freeze in ice cube trays for up to three months. Gently warm before using in hot drinks.
