Irish Potatoes

Ingredients
  

Main
  • 2 lbs potatoes preferably Yukon Gold or Russet
  • 1/2 cup unsalted butter
  • 1/2 cup milk or heavy cream
  • Salt to taste
  • Black pepper to taste
  • Chives or parsley for garnish optional

  • Large pot
  • Colander
  • Potato masher or ricer
  • Wooden spoon or spatula
  • Measuring cups and spoons

Method
 

  1. Peel the potatoes and cut them into evenly sized chunks.
  2. Place the potato chunks in a large pot and cover with cold water.
  3. Add a generous pinch of salt to the water.
  4. Bring the water to a boil, then reduce to a simmer and cook for 15 to 20 minutes until the potatoes are fork-tender.
  5. Drain the potatoes in a colander and let them sit for 1 minute to allow excess moisture to escape.
  6. Return the potatoes to the pot and mash them using a potato masher or ricer until smooth.
  7. Add the butter and milk and stir until well combined and creamy.
  8. Season with salt and black pepper to taste, garnish with chopped chives or parsley if desired, and serve warm.

Notes

For an extra creamy texture, warm the milk before adding it to the potatoes.
