- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan with butter, cooking spray, or line with parchment paper.
- In a large mixing bowl, whisk together 1 1/2 cups all-purpose flour, 1 1/2 teaspoons baking powder, and 1/4 teaspoon salt to distribute the leavening evenly.
- Spoon 2 cups of softened vanilla ice cream into the bowl with the dry ingredients.
- Stir the mixture with a wooden spoon or rubber spatula until just combined, about 30 to 40 seconds, leaving a few small lumps.
- Add 1/2 teaspoon vanilla extract if using, and gently fold it into the batter with a few more strokes.
- Transfer the batter into the prepared loaf pan, smoothing the top gently without compacting it.
- Bake for 25 to 30 minutes until the top is golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the bread cool in the pan for 10 minutes, then turn it out onto a wire cooling rack and cool completely before slicing.
