- Gather all your spices and measure each into a small mixing bowl.
- Add chili powder, ground cumin, paprika, garlic powder, onion powder, dried oregano, and ground coriander into the bowl.
- Whisk the spices together for about 30 seconds to combine evenly and remove clumps.
- Sprinkle in the cayenne pepper and black pepper while whisking continuously for even distribution.
- Add the sea salt and whisk for an additional 20 seconds until the blend is uniform.
- Transfer the seasoning blend into a small airtight jar or container using a funnel to prevent spills.
- Label the jar with the date and name using masking tape or a label for easy identification.
- To use, heat 1 tablespoon of oil in a large skillet over medium-high heat until shimmering and add 2 to 3 pounds of bite-sized chicken pieces.
- Cook the chicken for 5 to 7 minutes, stirring occasionally, until browned on all sides.
- Sprinkle 2 to 3 tablespoons of the seasoning blend over the chicken, add 1/4 cup of water or chicken broth, reduce heat to medium, and simmer for 3 to 5 minutes until the liquid reduces and the chicken reaches 165°F.
