  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground coriander optional but recommended

Method
 

  1. Gather all your spices and measure each into a small mixing bowl.
  2. Add chili powder, ground cumin, paprika, garlic powder, onion powder, dried oregano, and ground coriander into the bowl.
  3. Whisk the spices together for about 30 seconds to combine evenly and remove clumps.
  4. Sprinkle in the cayenne pepper and black pepper while whisking continuously for even distribution.
  5. Add the sea salt and whisk for an additional 20 seconds until the blend is uniform.
  6. Transfer the seasoning blend into a small airtight jar or container using a funnel to prevent spills.
  7. Label the jar with the date and name using masking tape or a label for easy identification.
  8. To use, heat 1 tablespoon of oil in a large skillet over medium-high heat until shimmering and add 2 to 3 pounds of bite-sized chicken pieces.
  9. Cook the chicken for 5 to 7 minutes, stirring occasionally, until browned on all sides.
  10. Sprinkle 2 to 3 tablespoons of the seasoning blend over the chicken, add 1/4 cup of water or chicken broth, reduce heat to medium, and simmer for 3 to 5 minutes until the liquid reduces and the chicken reaches 165°F.

Notes

Make a double or triple batch of this seasoning blend and store it in an airtight container for up to six months.
