Method
 

  1. Gather all ingredients and dice the cooked ham, celery, and red onion.
  2. In a mixing bowl, combine the diced ham, mayonnaise, diced celery, diced red onion, and Dijon mustard.
  3. Season the mixture with salt and pepper to taste, and gently fold until well combined.
  4. If desired, lightly toast the bread slices until golden brown.
  5. Spread a generous amount of the ham salad mixture onto one slice of bread.
  6. Layer leafy greens on top of the ham salad if using.
  7. Place the second slice of bread on top and press down gently to secure.
  8. Slice the sandwich in half with a sharp knife and serve immediately or wrap for later.

Notes

Letting the ham salad sit in the refrigerator for about 30 minutes enhances the flavors.
