- Rinse the collard greens thoroughly under cold water to remove any dirt or grit.
- Remove tough stems and chop the greens into bite-sized pieces.
- Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic and sauté until soft and fragrant, about 5 minutes.
- Pour in the broth and bring to a gentle simmer over medium heat.
- Add the chopped collard greens to the pot, stirring to coat them in the broth.
- Stir in smoked paprika, cayenne pepper, salt, and pepper, adjusting seasoning to taste.
- Cover the pot and let the greens simmer for 30 minutes until tender.
- Stir in apple cider vinegar just before serving to add brightness.
