  • 2 cups gluten free flour blend
  • 1 cup mashed potatoes about 2 medium potatoes
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

  • Pot for boiling
  • Slotted spoon
  • Flour for dusting
  • Fork or gnocchi board

Method
 

  1. Boil the potatoes in a pot of water for 15 to 20 minutes, until fork-tender.
  2. Drain and let potatoes cool slightly, then mash until smooth.
  3. In a large bowl, combine mashed potatoes, gluten free flour, egg, salt, and pepper; mix until a soft dough forms.
  4. Lightly knead the dough on a floured surface for about 1 minute.
  5. Divide the dough into portions, roll each into a 1/2-inch thick rope, then cut into 1-inch pieces.
  6. Press each piece with a fork to create ridges.
  7. Bring a pot of salted water to a gentle boil; cook gnocchi until they float, about 2 to 3 minutes.
  8. Use a slotted spoon to transfer gnocchi to a serving dish and toss with your favorite sauce.

Notes

Don't overcrowd the pot when boiling gnocchi; it can lead to uneven cooking.
