Ingredients
  

Main
  • 1 cup raw honey
  • 1 to 2 teaspoons red pepper flakes
  • 2 to 3 garlic cloves smashed
  • 1/4 teaspoon sea salt
  • 1 sprig fresh rosemary or thyme optional

  • 8-ounce mason jar or glass container with lid
  • Small saucepan
  • Wooden spoon or heat-resistant silicone spatula
  • Fine-mesh strainer (optional)
  • Measuring spoon

Method
 

  1. Place an 8-ounce mason jar on a heat-safe surface and ensure it is completely dry.
  2. Pour 1 cup of raw honey into the jar, leaving room at the top for infusion.
  3. Set the jar in a saucepan filled with water up to halfway up the jar’s sides and heat over medium-low heat for 2 to 3 minutes until the honey is fluid.
  4. Stir in 1 to 2 teaspoons of red pepper flakes using a wooden spoon to distribute evenly.
  5. Add 2 to 3 smashed garlic cloves and stir gently to combine.
  6. Sprinkle in 1/4 teaspoon of sea salt and add a sprig of fresh rosemary or thyme if desired, then stir thoroughly.
  7. Remove the jar from the water bath and let it cool to room temperature for about 10 to 15 minutes, then seal with the lid.
  8. Infuse the honey at room temperature for 2 to 4 hours or overnight for deeper flavor development.
  9. Taste the fire honey and adjust heat by adding more red pepper flakes if needed, then seal and store.

Notes

Store fire honey in a cool, dark place at room temperature for up to 3 months. Strain out solids before serving for a cleaner presentation.
