  • 3 cups einkorn flour
  • 1 1/2 teaspoons salt
  • 1 teaspoon instant yeast
  • 1 1/4 cups warm water about 110°F
  • 1 tablespoon honey optional, for sweetness

Method
 

  1. In a mixing bowl, combine the einkorn flour, salt, and instant yeast.
  2. Pour in the warm water and honey (if using) to activate the yeast.
  3. Using a wooden spoon or dough whisk, stir until a shaggy, slightly sticky dough forms.
  4. Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
  5. Place the kneaded dough back in the bowl, cover with a kitchen towel, and let rise in a warm place for about 1 hour or until doubled in size.
  6. Punch down the risen dough to release air bubbles, shape into a loaf, and place in a greased loaf pan.
  7. Cover the loaf with the kitchen towel and allow a second rise for 30 minutes until puffy.
  8. Preheat the oven to 375°F (190°C) and bake the loaf for 30-35 minutes until golden brown and hollow-sounding when tapped.

Notes

For best crust, place a small pan of water in the oven while baking to create steam.
