Ingredients

Main
  • 2 1-inch thick Delmonico steaks
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • 2 cloves garlic minced
  • 2 sprigs fresh rosemary optional

Equipment

  • Cast iron skillet or grill
  • Tongs
  • Meat thermometer
  • Cutting board
  • Sharp knife

Method

  1. Remove the steaks from the refrigerator and let them sit at room temperature for about 30 minutes.
  2. Pat the steaks dry with paper towels and rub both sides with olive oil.
  3. Generously season with salt and black pepper.
  4. Heat your cast-iron skillet or grill over high heat until it’s very hot.
  5. Place the steaks in the skillet or on the grill and let them sear without moving them for about 4-5 minutes.
  6. Flip the steaks using tongs, and add minced garlic and rosemary to the skillet.
  7. For medium-rare, cook the steaks for another 3-4 minutes.
  8. Use a meat thermometer to check for an internal temperature of 130°F.
  9. Remove the steaks from the heat and let them rest on a cutting board for at least 5 minutes.
  10. Slice the steaks against the grain and serve.

Notes

Pairs beautifully with roasted vegetables or a fresh salad.
