Ingredients
  

Main
  • 1 cup pitted dates
  • 2 cups water
  • 1 teaspoon vanilla extract optional
  • 1/2 teaspoon sea salt

Method
 

  1. Pit the dates if they aren’t already pitted to avoid bitter flavors.
  2. In a medium saucepan, combine 1 cup pitted dates and 2 cups water.
  3. Bring the mixture to a boil over medium-high heat.
  4. Reduce heat to low and simmer for 30 minutes, stirring occasionally, until the syrup thickens.
  5. Check the consistency; if it’s too thin, continue simmering until it’s thick but still pourable.
  6. Remove the saucepan from heat and let the mixture cool slightly before blending.
  7. Blend the cooled mixture until smooth, then strain through a fine mesh strainer into a bowl.
  8. Transfer the strained syrup to a storage container, let it cool completely, then seal and refrigerate.

Notes

Store the syrup in an airtight container in the refrigerator for up to two weeks.
