- Dice the onion finely and measure out all ingredients before starting to cook.
- Pour the vegetable or chicken stock into a small saucepan and bring to a gentle simmer over medium heat. Keep warm throughout cooking.
- Heat 1 tablespoon butter and 1 tablespoon olive oil in a large, heavy-bottomed saucepan over medium heat. Once the butter foams, add the finely diced onion and stir constantly for 1 to 2 minutes until translucent and fragrant.
- Pour in the Arborio rice and stir constantly for about 2 minutes, coating each grain in the butter and oil mixture, until the rice is lightly toasted.
- Pour in the dry white wine and stir continuously until the liquid is completely absorbed by the rice, about 1 minute.
- Add about 1 ladle of warm stock (roughly 0.75 cup) to the rice and stir constantly, maintaining a gentle simmer. When the liquid is mostly absorbed and you can see the spoon creating a path through the rice, add the next ladle of stock.
- Continue adding stock one ladle at a time, stirring frequently, for 18 to 20 minutes total until the rice is creamy and tender but still has a slight firmness when you bite into each grain.
- When the rice is nearly cooked but still slightly liquid, remove the pan from heat and stir in the remaining 2 tablespoons of butter and the grated Parmesan cheese until glossy and creamy.
- Taste the risotto and adjust salt and pepper as needed. Serve immediately into warm bowls while still creamy and steaming hot.
Notes
Never walk away from risotto once you've started cooking it; constant stirring is the most important factor in achieving silky, creamy texture. Keep stock warm throughout cooking to maintain consistent temperature. The rice should be al dente with a slight firmness when done. Best served immediately, though leftovers can be stored in an airtight container for up to 3 days in the refrigerator or 2 months in the freezer. Reheat gently with additional warm stock to restore creaminess.
