Ingredients

  • 3 cups frozen peas
  • 3 tablespoons unsalted butter
  • 2 cloves garlic minced
  • 1/2 cup heavy cream or half-and-half
  • Salt and black pepper to taste
  • 1/4 teaspoon fresh nutmeg optional but recommended

  • Knife for mincing garlic

Method
 

  1. Heat a medium saucepan over medium heat and melt the unsalted butter, about 1-2 minutes until golden and fragrant.
  2. Add the minced garlic and cook, stirring constantly for 30 seconds until fragrant.
  3. Add the frozen peas and stir to coat evenly with the butter-garlic mixture.
  4. Cook the peas uncovered over medium heat for 2-3 minutes, stirring occasionally, until heated through and bright green.
  5. Reduce heat to medium-low and pour in the heavy cream or half-and-half, stirring gently to combine.
  6. Sprinkle in the fresh nutmeg if using and stir to distribute evenly.
  7. Simmer gently for 2-3 minutes without boiling, stirring occasionally until the sauce thickens and coats the back of a spoon.
  8. Remove from heat and season with salt and black pepper to taste, starting with 1/4 teaspoon of each and adjusting as needed.
  9. Transfer the creamed peas to a serving bowl and serve immediately while hot.

Notes

For the silkiest sauce, maintain a gentle simmer after adding the cream and avoid boiling to prevent curdling.
