- Heat a medium saucepan over medium heat and melt the unsalted butter, about 1-2 minutes until golden and fragrant.
- Add the minced garlic and cook, stirring constantly for 30 seconds until fragrant.
- Add the frozen peas and stir to coat evenly with the butter-garlic mixture.
- Cook the peas uncovered over medium heat for 2-3 minutes, stirring occasionally, until heated through and bright green.
- Reduce heat to medium-low and pour in the heavy cream or half-and-half, stirring gently to combine.
- Sprinkle in the fresh nutmeg if using and stir to distribute evenly.
- Simmer gently for 2-3 minutes without boiling, stirring occasionally until the sauce thickens and coats the back of a spoon.
- Remove from heat and season with salt and black pepper to taste, starting with 1/4 teaspoon of each and adjusting as needed.
- Transfer the creamed peas to a serving bowl and serve immediately while hot.
Notes
For the silkiest sauce, maintain a gentle simmer after adding the cream and avoid boiling to prevent curdling.
