  • 1 cup corn kernels fresh or frozen
  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Oil for frying

Method
 

  1. In a mixing bowl, combine 1 cup corn kernels, 1/2 cup all-purpose flour, 1/2 cup cornmeal, 1 teaspoon baking powder, 1/2 teaspoon salt, and 1/2 teaspoon black pepper.
  2. In a separate bowl, whisk together 1/4 cup milk and 1 large egg until smooth.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined, being careful not to overmix.
  4. Heat oil in a frying pan or deep fryer over medium heat to 350°F (175°C).
  5. Scoop spoonfuls of the batter and shape into small nuggets.
  6. Carefully add the nuggets to the hot oil in batches and fry for 2-3 minutes per side until golden brown.
  7. Use a slotted spoon to transfer the nuggets to paper towels to drain excess oil.
  8. Serve the corn nuggets hot with your favorite dipping sauce.

Notes

For extra crunch, double-dip the nuggets in the batter before frying.
