Method
- Pull out your food processor or blender and have all ingredients measured and ready to go.
- Pour the full cup of mayonnaise into your food processor or blender first.
- Roughly chop 2 to 3 chipotle peppers and add them to the blender along with 1 tablespoon of the adobo sauce they come in. Start with 2 peppers if you prefer milder heat.
- Add your minced fresh garlic to the blender with the other ingredients.
- Pulse the blender or food processor for 30 to 45 seconds, then run it continuously for another 15 to 20 seconds until the mixture is completely smooth and creamy.
- Squeeze in the fresh lime juice, then add the cumin, smoked paprika, salt, and black pepper.
- Pulse the blender or food processor for 15 to 20 seconds to fully incorporate the lime juice and spices.
- Transfer a small spoonful to a clean spoon and taste the aioli carefully. Add more salt, lime juice, or additional minced garlic depending on your preference.
- If the sauce tastes sharp or slightly bitter, add 1/4 teaspoon of honey or a pinch of sugar to balance it out.
- Scrape the aioli into a glass jar or airtight container using a rubber spatula. Store it in the refrigerator for up to one week.
Notes
Make chipotle aioli at least a few hours ahead of serving, or better yet, the night before. The flavors meld and deepen as it rests in the fridge, tasting even better after a day than it does fresh. Store in an airtight glass container in the coldest part of your refrigerator for up to 7 days. Always use a clean spoon when scooping to avoid introducing bacteria.
