Ingredients

Main
  • 8 oz spaghetti or your favorite pasta
  • 4 oz diced bacon or pancetta
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 2 tbsp gochujang Korean chili paste
  • 1 tbsp soy sauce
  • 2 green onions sliced
  • Salt and pepper to taste

Equipment

  • Large pot for boiling pasta
  • Skillet or frying pan
  • Whisk
  • Mixing bowl
  • Measuring cups and spoons
  • Knife and chopping board

Method

  1. Bring a large pot of salted water to a boil.
  2. In a skillet over medium heat, cook the diced bacon until crispy.
  3. In a mixing bowl, whisk together the eggs, Parmesan cheese, and heavy cream until smooth.
  4. In a small bowl, mix the gochujang and soy sauce until well combined.
  5. Once the pasta is cooked al dente, reserve a cup of pasta water and drain the rest.
  6. Add the drained pasta to the skillet with bacon and toss to combine.
  7. Remove the skillet from heat and quickly pour in the egg mixture, stirring constantly.
  8. Stir in the gochujang and soy sauce mix, adding reserved pasta water as needed for consistency.

Notes

Adjust the spice level with more or less gochujang and serve immediately for the best texture.
