Ingredients

Main
  • 1 can black beans rinsed and drained
  • 1 cup shredded cheese cheddar or Mexican blend
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Optional: diced onions jalapeños, sour cream, or salsa for serving

Equipment

  • Large skillet
  • Spatula
  • Measuring cups and spoons
  • Aluminum foil or parchment paper
  • Serving plates

Method

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the rinsed black beans to the skillet. Stir in the cumin, chili powder, salt, and pepper, cooking for about 3-5 minutes until heated through.
  3. Using a spatula, gently mash the beans to create a somewhat smooth mixture.
  4. In a separate pan, warm each tortilla for about 30 seconds on each side.
  5. Sprinkle shredded cheese onto the bean mixture in the skillet. Allow it to melt slightly.
  6. Place a generous scoop of the bean and cheese filling in the center of each tortilla. Fold in the sides and roll tightly to form a burrito.
  7. Return the burritos to the skillet seam-side down. Toast for 2-3 minutes per side until golden brown and crispy.
  8. Slice the burritos in half and serve with optional toppings like salsa or sour cream.

Notes

For extra flavor, consider adding sautéed onions or bell peppers to the bean mixture.
