- Peel, core, and slice 3 medium apples to ensure even cooking.
- In a mixing bowl, combine the apple slices with 1/4 cup granulated sugar, 1 teaspoon cinnamon, and 1 tablespoon lemon juice.
- Preheat the oven to 400°F (200°C).
- On a lightly floured surface, roll out each puff pastry sheet to smooth out any creases.
- Cut the pastry into squares or rectangles and place a spoonful of the apple mixture in the center of each.
- Fold the pastry over the filling to form pockets and press the edges with a fork to seal.
- Brush the tops of the pastries with 1 beaten egg for a golden finish.
- Place the pastries on a parchment-lined baking sheet and bake at 400°F (200°C) for 25-30 minutes until golden brown.
Notes
For extra crunch, sprinkle coarse sugar on top before baking. Chill pastries before baking for an even flakier texture.
