Ingredients

Main
  • 1 ½ cups active sourdough starter
  • 1 cup warm water
  • 3 ½ cups bread flour plus extra for dusting
  • 2 tablespoons granulated sugar
  • 1 tablespoon salt
  • 2 tablespoons unsalted butter softened
  • 1 egg for egg wash, optional
  • Sesame seeds or poppy seeds optional, for topping

Equipment

  • Mixing bowl
  • Dough scraper
  • Baking sheet
  • Parchment paper
  • Kitchen scale
  • Plastic wrap or a damp cloth

Method

  1. In a large mixing bowl, combine the active sourdough starter and warm water. Mix until well combined.
  2. Gradually add the bread flour, granulated sugar, and salt to the mixture. Stir until a shaggy dough forms.
  3. Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.
  4. Add the softened butter and continue kneading until fully incorporated.
  5. Place the dough in a greased bowl and cover it with plastic wrap or a damp cloth. Let it rise in a warm place for 3-4 hours, or until doubled in size.
  6. Once risen, punch down the dough and divide it into 8 equal pieces. Shape each piece into a round bun and place them on a baking sheet lined with parchment paper.
  7. Cover the shaped buns with a cloth and let them rise for another hour.
  8. Preheat your oven to 375°F (190°C). Brush the tops with an egg wash and sprinkle with seeds before baking for 20 minutes, or until golden brown.

Notes

These buns are fantastic with a variety of fillings, making them incredibly versatile. They shine alongside grilled patties, crispy veggies, or even as a base for sliders.
