Ingredients

Main
  • 4 medium tomatoes halved
  • 1 medium onion quartered
  • 2 cloves garlic unpeeled
  • 1-2 jalapeño peppers halved (adjust for heat)
  • 1/4 cup fresh cilantro chopped
  • 1 lime juiced
  • Salt to taste
  • Black pepper to taste

Equipment

  • Grill or smoker
  • Cutting board
  • Sharp knife
  • Mixing bowl
  • Blender or food processor

Method

  1. Preheat your grill or smoker to medium-high heat.
  2. Halve the tomatoes, quarter the onion, and halve the jalapeños.
  3. Place all the prepared vegetables directly on the grill and smoke for about 20-30 minutes until tender and slightly charred.
  4. Remove the veggies from the grill and let them cool for a few minutes.
  5. In a blender or food processor, combine the grilled vegetables, cilantro, lime juice, salt, and pepper. Blend until you reach your desired salsa consistency.
  6. Sample the salsa and adjust the seasoning if needed.
  7. Transfer the salsa to a mixing bowl and refrigerate for at least 30 minutes.
  8. Serve your smoked salsa with tortilla chips or as a topping for your favorite dishes.

Notes

Letting the salsa chill in the fridge enhances its flavor — it’s worth the wait!
