Ingredients

Main
  • 1 ½ cups warm water 110°F to 115°F
  • 2 tablespoons sugar
  • 2 teaspoons active dry yeast
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • ½ cup baking soda
  • 1 large egg beaten, for egg wash
  • Coarse sea salt for topping

Equipment

  • Large mixing bowl
  • Stand mixer with dough hook (optional)
  • Measuring cups and spoons
  • Baking sheet
  • Parchment paper
  • Pot for boiling
  • Slotted spoon
  • Pastry brush

Method

  1. In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
  2. Add flour and salt to the yeast mixture. Mix until a shaggy dough forms, then knead for about 5 minutes until smooth.
  3. Place the dough in a greased bowl, cover with a damp cloth, and let rise for about 1 hour or until doubled.
  4. Preheat your oven to 425°F (220°C).
  5. Divide the dough into 8 equal pieces and shape each into a ball. Place balls on a parchment-lined baking sheet.
  6. Boil water in a pot and add baking soda. Carefully drop each bun into boiling water for about 30 seconds, flipping halfway.
  7. Remove buns with a slotted spoon and place on the baking sheet. Brush with beaten egg and sprinkle with coarse sea salt.
  8. Bake in the preheated oven for 15-20 minutes until golden brown.
