Ingredients

For the Sauce
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1/2 cup grated Gruyère cheese
  • 1/4 cup grated Parmesan cheese
  • Salt to taste
  • Freshly ground black pepper to taste
  • A pinch of nutmeg optional

Equipment

  • Medium saucepan
  • Whisk
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Grater (for cheese)

Method

  1. In a medium saucepan, melt the butter over medium heat.
  2. Whisk in the flour and cook for about 1-2 minutes to form a roux.
  3. Slowly pour in the milk while whisking constantly to prevent lumps.
  4. Add salt, pepper, and nutmeg to taste.
  5. Continue to cook and stir until the sauce is thick enough to coat the back of a spoon, about 5 minutes.
  6. Remove from heat and stir in the Gruyère and Parmesan cheese until melted and smooth.
  7. If the sauce is too thick, whisk in a little more milk to reach the desired consistency.
  8. Serve warm over your favorite dishes.
