Ingredients

For the Grill
  • 1 lb beef steak like flank or skirt steak
  • 1 lb pork shoulder cubed
  • 1 lb chicken thighs boneless and skinless
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Salsa
  • 2 ripe tomatoes
  • 1 onion quartered
  • 2 jalapeños stems removed
  • 2 cloves garlic
  • 1/4 cup fresh cilantro chopped
  • Juice of 1 lime

Equipment

  • Molcajete (or a large mortar and pestle)
  • Grill or grill pan
  • Knife
  • Cutting board
  • Mixing bowl
  • Spatula

Method

  1. Start by cutting the beef, pork, and chicken into bite-sized pieces.
  2. In a mixing bowl, combine the meats with olive oil, salt, and pepper.
  3. Heat your grill or grill pan over medium-high heat.
  4. Add the seasoned meats to the grill and cook for about 5-7 minutes per side, or until they reach your desired doneness.
  5. While the meat is grilling, blend the tomatoes, onion, jalapeños, and garlic in the molcajete until smooth.
  6. Once the meat is cooked, let it rest for a few minutes. Then, cut the meat into strips and mix it with the salsa in the molcajete.
  7. Top your molcajete with fresh cilantro and lime juice.
  8. Serve the molcajete hot, alongside warm tortillas.

Notes

Let the grilled meat rest before cutting to keep it juicy. Serve with warm tortillas to soak up all the deliciousness.
